Making your own pizzas

I just mix wholemeal or spelt flour, water and olive oil to make the base. As I write this it has just dawned on me that you could also use the whey from the mozarella instead of water, rather than tipping it down the sink. I tend to start baking the base while putting together the topping. If you are happy with pink pizza, you can whizz some fresh tomatoes in the blender. Sometimes I use tinned tomatoes. I open the tin and holding the lid down, pour the juice out of the tin and get a glass of tomato juice, then chop up the flesh. Apart from the mozarella (the proper stuff made from water bison's milk is much better) the basil and the oregano, I use whatever is lying around for topping.1

Whenever I get YS baby spinach I sauté it down with garlic and seasoning and freeze. It makes a nice pizza topping mixed with a bit of passata. No man is worth crawling on this earth.
So much to read, so little time.1
