What's the quickest cake or biscuit recipe?

Some friends rang to ask if they they could call in....I had absolutely nothing I could offer in the way of cake or biscuits... ingredients galore but little time. Any ideas for something really quick & yummy to bake?

    Twinks hob nobs or a nice victoria sandwich cake with jam in it. If you've a mixer shortbread is easy and you just push into a circle score and bake - 6oz plain flour, 4oz butter / marg, 2oz sugar.

    Scones - open freeze them unbaked and then bag up. Cooking will only be a few more minutes than unfrozen and if you keep a batch in the freezer you can serve oven warm scones to unplanned guests. (They make a nice special breakfast too)

    I use a basic cake mix 4oz marg, flour, sugar,2 med eggs and a dash of milk. Bung them in a bowl and mix with hand mixer. I just microwave it and then spread jam over the top and sprinkle on dessicated coconut. Takes about 15 mins total.

    3 wonderfull kids :female::female::male:, 1 fab hubby :heart: , 2 beautifull cats and 1 very large dog = my family!

  • Scones get my vote for quickness, but if you have kids coming too, try fairy cakes which cook in about 12-15 mins. All in one basic sponge from memory -
    1. 4oz Stork marg or similar - can be used from fridge , + 4oz sugar
    2. Cream together, add 2 eggs, beaten,
    3. Add 4oz self raising flour, 1 tsp baking powder, few drops vanilla if you have it,
    4. Add a little milk till you have a thick batter, put in patty pan tin, bake about 180 degrees C for 12-15 mins.

    Bonus if there are kids coming you can keep them amused for a bit putting on icing and sprinkles etc once they've cooled. Rainy day entertainment at it's best and pretty cheap and easy to do, with many variations. Lemon/orange zest in the mix is nice, with a lemon/orange buttercream frosting. Or chocolate, sometimes we add raspberries if they're going squishy, pink coconut icing is a bit retro too. Lots of variations - try googling the Hummingbird Recipe book for lots of suggestions!

    Mmmm, warm scones, yum.

    I ditto the fairy cakes, whip up a batter by hand or in the whizzer in a few mins, 10 mins in the oven, voila!
    I ave a dodgy H, so sometimes I will sound dead common, on occasion dead stupid and rarely, pig ignorant. Sometimes I may be these things, but I will always blame it on my dodgy H.

    Sorry, I'm a bit of a grumble weed today, no offence intended ... well it might be, but I'll be sorry.
  • Scotch Pancakes (Pikelets) are very quick and easy to make and only take a couple of minutes each to cook in a large pan - saves having to wait while the oven heats up! Lovely served with butter/jam/syrup...

    I would second the fairy cakes . You can make homemade hobknobs up into a sausage shape and freeze. Slice from frozen and cook . I have one in my freezer for those emergencies (when i want biscuits, not visitors:p) A lot of biscuits can be made up like that. I have also done the same with queenies everyday biscuits

    Really quick cakes is the closest thread I could find, so will merge this later to keep the ideas together
