Morgage and full time student

My fiancee currently has a mortgage on a property with her ex-husband (and also on the deeds). She cannot afford to take the mortgage over completely due to her salary (but is struggling and actually paying the full amount herself).
I am a full time mature student (29 y/o) at university, getting a student loan and in the holidays I work as an IT contractor. We were wondering if it's possible to get a mortgage in both our names (and the deeds changed).
I have worked as an IT contractor for quiet a few years, usually rolling 3 or 6 month contracts so technically back then I did not have a permanent job.
Any comments or advice welcome
