Damsons & Apples-What To Do With Them?

Evening Guys

Have been given a bag of Damsons and a bag of cooking apples by BIL and not too sure what to do with them:confused:

Theres 2.5lbs of Dansoms and 6.5lbs of cooking apples.

Any recipes/ideas peeps???

    Damson crumble - the very thought of it makes me weak at the knees.

    Seriously, damsons make great crumble, damson eve's pudding (no apples) - if you can't face hot puddings at this time of year it's not a problem. Simply stew the damsons in a little water and sugar to taste and freeze them until you're ready to use them.

    Damson fool is very nice and a good use of the stewed damsons - look up a generic fruit fool recipe.

    Damson Jam is the other obvious thing.

    Depending on the damsons that you've got it may be possible to take out the stones. Cut through them around the middle and twist to open them up. If they don't respond to this treatment you can either warn the diners in advance to look out for stones or pick them out when cooked.

    Damson stones probably put off a lot of people but they don't know what they're missing.

    I'll let others suggest what to do with the apples.
  • Hi, PP. Did you see my thread on "gluts in the garden"? Recipes for sloe gin (damsons work just as well) and apple wine.

    Damson jam - I have a brill recipe if you'd like.

    Apple pie, bramble and apple crumble. Apple cake - I have recipe for that, too.

    It's clearly been a bumper year - I've never had so many damsons on my tree.

    I'll try and think of more.

    you could freeze the apples for winter for lovely warming puds, just peel and slice into water with lemon juice or a little salt and take out enough for a crumble etc and put in freezer bags, will keep fine

    Damson Gin

    Dont know how to make it think its just cheap gin sugar and water. My mum used to make it for xmas presents and then used the damsons to make damson crumble very yummy but abit potent. :eek:

    Damsons, unlike plums, are reluctant to give up their stones. I cook them slowly in a small amount of water, and the stones then come away. I count the damsons in and the stones out, so that I'm sure I've got them all! Don't want my children to swallow one. You can then freeze them.

    As for apples, I use my freezer stock pretty quickly - they've definitely gone before the next season's are ready. I don't, therefore, bother cooking them. I peel, core and leave as large chunks. I drop these into water, with a dash of lemon, to stop them browning, until I've prepared the lot. I then dry on a clean tea towel, and freeze in a bag.

    i would poach the apples penny pincher and put into lrge marg tubs if you have or ice cream tubs
