I'm probably rubbish at this, but the recipe I use for the crumble topping is 2 parts flour to 1 part sugar and 1 part margarine (e.g. 150g flour, 75g sugar and 75g marg) plus a pinch of cinnamon.
As far as the blackberry bit is concerned, I normally mix them with apples, then just sprinkle no more than a tablespoon of sugar over them (sometimes only a teaspoon), and squeeze a good "worm" of honey over it all before putting the crumble on. If you are using fruit that is really tart, my mum always used to say to sprinkle a bit of bicarb on it first, so you need less sugar. It works well with rhubarb. HTH0 -
I put a tablespoon per 8oz for the fruit and make the crumble with 8oz flour, 5oz margarine, pinch salt, 3oz sugar and 2oz oats - the oats give it a lovely texture. I rub the fat into the flour, then add the other ingredients.Jane
