Roasted Butternut Squash

There have been a few postings about Butternut squash but last night, late (waiting up for errant 16 year old but that's another story) I was watching UKTV Food and there was a programme on which I hadn't seen before called "The Barefoot Contessa" - Basically she is an American Nigella type, but a little older and more rounded, and she was cooking roast dinner - it was so lovely looking I had to get up and have a go today and we have just finished a lovely meal!! She made roast beef (but I only had a chicken) with caramellised roast butternut squash. This was just a cubed peeled butternut squash tossed with 2tbs melted butter, salt and pepper and 2 - 3 tbs of brown sugar. You just mix it up well and then spread it out on a greased baking sheet and roast for 20 - 30 minutes. It was just lovely!!! I threw some parsnips on with it to make it go further and the whole lot was eaten by me and my VERY fussy kids. I made yorkshire puddings and cabbage too and it was a lovely meal. I am going to look out for more Barefoot Contessa shows - the show was great - all about cooking and decorating your home with fruits and stuff from the garden and also making HM presents like cookies as gifts ort of gourmet OS!!

Have never cooked butternut squash before but this sounds delicious and simple so my kind of cooking:D
