watercress soup

I tried making watercress soup today, but it only tasted ok. Does anyone have a nice recipe for it?

    Hi Prudent. This is pretty much how I would make it: http://www.watercress.co.uk/recipes/soups.065.shtml

    I think a key thing is not cooking the watercress for too long to preserve the colour and flavour. Also, I find that the quality of bought w'cress varies tremendously - a lot of supermarket w'cress seems tasteless to me - and because it's bagged, you can't tell the quality. Best I had recently was from Waitrose.

    This is roughly how I made it, but with marigold stock as my dd is vegetarian. I think I probably cooked it too long.

    Although faddy and slimming etc. etc. this Liz Hurley recipe tastes really good. I love watercress soup and this is by far my favorite recipe.
