looking for new job during mortgage application

Hi All,
Were currently waiting for our mortgage offer to be accepted which should be this week or early next.
Ive being looking for a new job over last few months (better pay so no problem with the wage) and have an interview somewhere where I think I have a decent chance .
My question is - is there any problems with this - have to give 4 weeks notice minimum so wouldn't be until at least mid next month - well after (hopefully) we get mortgage accepted.
Next question is - if I go for the mortgage protection insurance - how would this work should anything happen - are there usually waiting periods if you get a new job etc.
