    some supermarkets do dry cured bacon - our sainsburys sell it loose at their butchers counter. It ain't cheap, but I would agree with previous posters who have said you need to use far less of it - it doesn't shrink by half (all that yucky salty water coming out of it) for a start!

    Hello OP,
    I agree with all the posters above about getting dry-cured bacon from your nearest butcher or farm shop, but that's not always possible depending on where you are.
    My local Tesco's does dry-cured bacon made by Richard Woodall - expensive but worth it. No wet goo.

    Or come to France :-)! Legend has it you can't buy bacon here, but that is a myth, and what you get is lovely and never oozes any white gunk. It doesn't come pre-packed though, and isn't called 'bacon' either. You have to go to the butcher or the fresh deli counter and get it sliced. But that way you also get them to slice it the thickness you want.

    If you are struggling to find bacon without the white stuff, you can improve whatever bacon you've got by boiling it very briefly (1-2 mins) in water before you cook it. Use the minimum amount of water and dry the bacon on kitchen roll before frying or grilling. HTH.
