new job - on probation

My huband and I have had an offer agreed on a house.
140000 with a 10% deposit.
However...He started a new job at the beginning of March started a new job and is on 6 months probation.
I have made enquiries with a few lenders now (hoping to go with NatWest) and all have said that they can't help us with a mortgage while he's on probation.
He has no gap in employment and same area of work, has got 3 months pay slips from new job.
Can't get the house taken of the market without confirming a lender with the estate agent.
How does the application process work, will this come up if we don't mention it when applying?

Hi
If it's of any interst, a colleague of mine is in the same place as yourselves. After trying various lenders they were able to get an offer from C&G while one of them was on probation.
