Growing butternut squashes

Hiya,
We've tried growing butternut squashes for the first time this year. We grew them from seeds saved from one we bought last winter, and so far they look pretty good. How do you tell when they are ready though? Some have got pretty big, but aren't as coloured (on the outside) as the ones in shops. Really not sure how long to leave them on the plants or what to do.
