Jar of sundried tomatoes

My sister has asked me to ask you guys a question cos I've been going on about how great it is!!!....so, she has a jar of sun dried tomatoes in olive oil which she's been keeping in the fridge, but the olive oil goes cloudy and not very nice. Can she freeze the tomatoes individually was what I was thinking?

    Not sure about the freezing of sun-dried tomatoes, but you're supposed to keep olive oil at room temperature......... could be where the problem is coming from. Olive oil in the fridge tends to go cloudy, as your sister has found out. :) Just store them in the cupboard. :) Sorry I can't be more help.

    Yep, Vicky's right, olive oil goes cloudy when it's too cold. Store them in a cupboard.
  • Ah, forgot to say that when it's kept in the cupboard it tends to go mouldy so seems like a no win situation - any suggestions?

    Eat them :D Seriously, there's a fab Jamie Oliver chilli con carne recipe that requires some sun-dried tomatoes. It really is divine...........

    Have you tried mi-cuit tomatoes from Merchant Gourmet ? They're expensive but aren't stored in oil and are soft and delicious. You need to store them in the fridge too and eat them fairly quickly.

    My favourite thing is to fill pittas with crumbled feta, hummus and chopped mi-cuit tomatoes.

    Mi-cuit means semi- dried I think ;)

    I have them with everything and anything! Put them in sandwices, through pasta with some pesto or oil and balsamic, stick them on top of pizzas, eat them on their own as anti-pasta with olives and feta and some crusty bread, grilled on toast, I even put them in stir-frys! Yummy yummy :D

    Oh, and tell her don't throw the oil away - it makes lovely salad dressing.
