Roast Vegetable pasta salad help please.

HI DS2 has a cookery lesson tomorrow and is cooking roast vegetable pasta, I think. He has to take in, carrot, mushrooms, yellow pepper, tomatoes and dried pasta along with some sort of dressing.

The teacher suggests pesto but no one in the family eats that. Can anyone suggest another dressing that he could take in that we might all enjoy. The ingredients have cost a fortune (Yellow pepper 89p :eek:) so I would really like the food to be enjoyed.

    I think any kind of ready-made salad dressing you like the taste of should work. A balsamic vinegar based one would be good, as you say - it should taste quite sweet and mild rather than drowning the taste of the vegetables. I was going to suggest a honey and mustard dressing for much the same reason - it's a nice easy one to make if you / your DS want to make a dressing rather than buying one, too (it's just a blob of French or wholegrain mustard, a blob of honey, a splash of vinegar and two to three times as much oil as vinegar, then shake or stir it all together - the amounts are a bit vague as you can scale it up or down depending on how much dressing you need).

    Not sure if you can get it ready made - I normally keep balsamic vinegar and olive oil in, so just make it up myself. I wouldn't say it was a particularly strongly flavoured dressing - more complementing to the veg and pasta. If you're near a Home Bargains, they normally sell both vinegar and oil quite cheap. If you're hoping not to spend any more money, you could give us an idea of what you've already got in your cupboards and i'm sure between the lots and lots of people on here, we will be able to come up with some random combination or other.

    A vinaigrette dressing doesn't have to be made from olive oil and balsamic vinegar although they are truly delicious together. Most people have some sort of vegetable oil and vinegar at home, don't they? As advised the oil and vinegar can be combined with either mustard or honey and mustard if poor old, plain vinaigrette is too mundane. Any old fresh herbs could be chucked in instead if there are any handy, maybe even dried ones at a push

    Thanks everyone. I didn't have any ingredients in the fridge that would make a dressing so in the end went to Sainsburys and bought 2 different dressings BOGOF for £1.08. We have opened them and tried them....honey and mustard ; and french dressing.... and we dislike both!

    I have written note in DS2 diary to say that we will put the dressings on at home as we all like different ones. I wish I had done that in the first place and save my time.

    Well the roast vegetable salad was FAB. DS2 had his cookery on the very last lesson so it was still really warm when he got home. We ate it there and then without any dressing on at all......delicious!

    sainsburys sells them individually for that!!! i bought one in waitrose as i was pushed and they weighted it and it was only 50p! waitrose!!!

    Thats what I would do, EVOO, balsamic vinegar & some chopped herbs (fresh or dried), maybe some garlic:D
