    Depends on which software you are using, but you need something along the lines of

    hours =
    if starttime<endtime, endtime-starttime
    if starttime>endtime, endtime+24-starttime

    This will not work if someone does a 25 hour shift - it will register as 1 hour.

    Easier than that:

    Type start time in with a colon separating the hours and minutes ie 09:00
    Same for end time
    Then in the next cell, subtract the start time from the end time. So assuming you have used the first 3 columns

    A1 = start time
    B1 = end time
    C1 = enter formula B1-A1

    Start time 23:00
    End time 07:00
    07:00 - 23:00
    answer ######## (ie negative time)

    you need to deduct the starting time from the finishing time to give the hours worked.
    doing it your way will always give a negative answer.

    If you're going over midnight you probably need to make sure you're using date and time, i.e. dd/mm/yyyy hh:mm AM

    Does this help (it's for excel)
    Otherwise googling produces lots of suggestions.
