Daughter turned vegetarian a few months ago and I am still experimenting. Looking in the fridge/ cupboard for this evening I was wondering if it would be possible put cook mushrooms and chickpeas in a Korma sauce? I am trying to get her into curry, but she will only eat korma so far.

The sauce is bottled I must confess, but combining single parenthood with a demanding job (and a riduculous amount of time on mse :D ) means I have to cut some corners.

    Can't see why not, sounds like the sort of thing I do when I've got odd bits in the cupboard. OH despairs of me but I like what is produced at the end of it!

    Ooh, yes, it will be lovely!

    I usually make mushroom and tofu korma, and chuck in a couple of tablespoons of chopped cashews if I have them on hand. One of my favourites.

    Sounds nice - what about frying off a few cubes of potato and an onion and adding them to it too?

    If the chickpeas are dried you need to soak them overnight.

    Sounds nice - what about frying off a few cubes of potato and an onion and adding them to it too?

    Great. I have about 7 little new potatoes that need used up and there are soem onions in the fridge.

    CHick pea and potato curry is noce, then you could save the mushrooms to make creamed mushrooms (mushrooms in a white sauce with garlic and parsley - nice on granary toast!)
    How old is DD? When I became veggie at 14 I cooked my own food, and by 15 was cooking everyone else's too LOL;)

    DD is 14 too! She absolutely hates cooking. She has killed several pans by going off and forgetting something is cooking :rotfl: I don't think there is any chance of her taking over the family cooking sadly...

    Chick pea & mushroom korma is a staple for us family of veggies I also add a tin of value baked beans this will feed all 4 of us plus leftovers for the next day - on toast or over a jacket pot

    My dd is 14 and loves this esp with basmati rice ( from lidl!!)

    For me it was a case of needs must! that or hiding the meat in a yorkshire pud and giving it to the dog!
