    Shepherds Pie is my signature dish, and anyone on OS knows this:D

    I use:

    Onion
    Minced Lamb (500g)
    Tin baked beans
    Mashed Spuds

    Cook onion, then add and fry mince and add beans. Place in bowl and put mash on top.

    Folk love my shepherds pie, tis very tasty. I make veggie sheps pie now but if you want to make it with mince here's how:

    Chop one onion and fry it with the mince, you don't need any extra oil to fry the onion in. Some chopped celery at this stage is nice to add too.
    When the mince is brown and onion soft drain the fat away using a colander (some people think the fat gives the flavour but there are still more juices in the meat and it is nicer/healthier to give flavour with other things).
    Add one or two tins choppped tomatoes depending on the quantities of mince/size of pie you are making.
    Add a few squirts of tomato ketchup
    Liberally splash with worcestershire sauce (I use about 2-3 tbsps, it's all down to taste really)
    make up 1/2 a cup of gravy with gravy granules and add this to the mix.
    Stir well and leave bubbling while you do the mash.

    For the mash I make sure I mash it before butter and milk are added to ensure no lumps. Then I add liberal amounts of both, salt and pepper, and a raw egg to make it really fluffy.

    Put the meat mixture in the bottom of a pie dish, taking care to drain off excess liquid (not all of it, just so it doesn't drown the potato). Add the mash on top and sprinkle with lots of grated mature cheddar cheese.

    Bung in oven for 20-30 mins.

    I make the veggie version as above but with lots of lentils and beans instead of mince.

    I have never heard of baked beans in shepherds pie. My mother used to put them in chilli after washing the ketchup off. I don't think she realised there was such a thing as kidney beans. Was not a great fan of her chilli.

    Here is my recipe: -

    Fry an onion till soft
    Chuck in the mince and brown
    Add some beef stock
    Add a chopped carrot
    Mixed herbs
    Dash of Worcester Sauce
    Tomato puree
    Pepper and sometimes a dash of tobasco
    Simmer for half an hour
    Top with leek and potato mash
    Top that with cheese
    Stick in the oven for half an hour


    Or just chuck the lot in the slow cooker in the morning then do the mash topping later.
  • This is the simplest and most traditional recipe I could find.

    Serves 3 to 4.

    750g of old potatoes (approx. 7 medium ones)
    1 tablespoon of butter
    1 tablespoon of milk
    1 onion
    2 carrots
    1 tablespoon of sunflower oil
    500g of minced lamb (or beef for a cottage pie)
    1 OXO cube
    Salt & freshly ground pepper

    Peel the potatoes and chop them into quarters. Boil them in a saucepan with at least a pint of water for 20 to 25 minutes until they are soft. Drain them and then mash them with the butter and milk. Add a ¼ teaspoon of freshly ground pepper. Keep mashing until it is smooth and lump free.

    While the potatoes are boiling, peel and chop the onion. Peel and grate the carrots. Put the oil and onion in a frying pan and fry them off for 5 minutes. Add the mince and cook for another 5 minutes. Add the carrot. Dissolve the stock cube in ½ a pint of water and add to the pan. Cook for a further 5 minutes until most of the water has boiled off.

    Put the meat mixture into a casserole dish. Level off the surface. Add the mashed potato on top. Spread to cover the meat mixture. Make artistic swirls, or whatever you fancy, in the mash. Cook in a preheated oven at 180°C, 350°F or gas mark 4 for 20 to 30 minutes until golden on top.

    You can sprinkle 50g of grated cheese on the top before putting it into the oven, or even add it while you are mashing the potato. You can also pad the dish out with 100g of chopped mushrooms, added to the meat.

    I'm on a constant quest to find veggie meals in the name of saving money and making me wife eat more veg.

    There is a vegetarian version of the recipe I found.

    Swap the minced meat for a 150g packet of dried soya mince or Protoveg Burgamix, made up as per the instructions on the packet. You can even just use 750g of broken up vegetarian burgers. Use a vegetable OXO cube. Add 2 teaspoons of Marmite and add this at the same time as the stock cube and water. You also add the meat substitute at this stage, as it doesn't need to be browned first. The temperature is the same, but the oven cooking time is reduced to 15 to 20 minutes.

    PS. Is it a shepherd's or cottage pie, though? Vegetarian's pie?

  • I do mine pretty much the same as everyone else, except i omit any gravy granules/oxo cubes etc and add a tin of (cheap) oxtail soup..trust me it makes a lovely, rich, flavoursome gravy.:D

    Hi charleybabes,

    I dry fry the lamb mince and drain off any fat. Then add some chopped onion, mushrooms, carrots and leeks. Let it cook for about 5 minutes then add worcester sauce, black pepper and lamb stock (or a lamb stock cube disolved in water). If the mixture is too sloppy thicken with a little cornflour and then add to the dish you intend to use. Make the mashed potatoes as you normally would (sometimes I add scallions) and spread over the lamb mixture. Add grated cheese to the top (optional). Pop it into the oven for about 20 - 25 minutes until the potatoes are beginning to colour.
