Morgage advice - Good deposit but both going into a partnership (business)

My partner and I have paid off all our debts and have been saving for quite some time. We have around £30k for a deposit with of which we are hoping to spend on a house of around £125k.
Currently my partner is a VAT registered sole trader in her 3rd year of trading. Her first 2 years were very profitable and she had an income of around £20 and 28k respectively. She has some big contracts this year and come next April she is hoping to have another successful year. I currently work full time, however I will become chartered in my field come November and we are hoping to set up in business together (partnership). Alongside this we would be moving to another part of the country but the nature of the business should allow us to continue trading and we will be able to get contracts before moving there.
My concern is how would it work getting a mortgage? Have we got much chance with me leaving a full time job to work with my partner? Will her 2 years count and how will they view me?
