Somewhere in the house I have the Pauper's Cookbook but can't lay my hands on it. Has anyone with a copy of this be kind enough to post the recipe please? This is an excellent vegetarian dish which i used to regularly make. Thank you.

Sorry, Martin, I have looked in my copy but I can't find it. I have the new edition which is different from the original and also The New Pauper's Cookbook. The index is rubbish but I've looked right through it and can't find it.

Another idea for a fab veggie main course is an onion tarte tatin. You make a cheese scone dough, then you cook lots of onions slowly until they've caramelised. Put them in a deep pie dish/tin, roll out the dough and fit on top and bake. Turn out on a plate so the onions are on top.

I have the original book but cannot find cheese gougere in the index.
There is cheese souffle, gnocci,cheese an onion tart and eggs in onion sauce but no gougere."This site is addictive!"

It must all have been a dream - I'm sure it was the Pauper's Cookbook! Thank you so much for looking. The recipe I remember is different from most I have found - it had the usual gougere on the outside (rather like choux pastry) and a runnier creamy centre. As it cooks the choux rises up to form a shell around the centre. The gougere recipes I've found on the web will do for the outside and I'll improvise the centre. Thank you all.0

I used to have The New Pauper's Cookbook(also by Jocasta Innes) which was published in the early 1990s. It had a white cover with a cartoon of a woman cooking on the front.Cheese Gougere rings a bell with me, so maybe it was in that one ? Does the book sound familiar ?0

Found this on astray, hope this helps, not the Jocasta one I'm afraid.
Gougere (puffed cheese pastry)
Yield: 16 Servings
¾cMilk⅓cUnsalted butter½tsSalt1cFlour4Eggs2cGrated gruyere cheese1Egg; beaten (for glaze)
Preheat over to 375F. Grease a 10 inch tart pan with removable bottom. Bring milk, butter and salt to a boil, stirring contantly. Remove from heat. Add flour all at once and beat with a wooden spoon until mixture pulls away from sides. Set over low heat and stir for 1 minute. Cool slightly. Add eggs one at a time, beating well after each addition. Mix in 1/2 cup gruyere. Spread batter over bottom of tart pan. Brush top with glaze. Sprinkle with remaining cheese. Bake until pastry puffs and top is golden brown, about 55 minutes. Cut into wedges (pastry will fall). Serve warm0
