This is a really nice pasta sauce with no tomatoes, or cream (admittedly lots of mozzarella!) Tonight we are having chicken spaghetti pie (a nigel slater recipe) which is wonderful. Not low fat but OK in moderation. A really lovely spaghetti dish is to warm some chilli flakes and sliced garlic in olive oil and use that to dress spaghetti, or I love peas and pesto.
You can also make white chillis, or green ones which have no tomatoes if you don't fancy pasta0 -

a pasta dish without tomato sauce, usually uses asparagus, red peppers and tinned salmon but it works good with any veg like peas, corgettes, sweetcorn, spinach etc it's got a bit of a curry taste which is quite interesting!
the amount of veg and pasta you add really depends on how much you want to eat! i have a habit of making stuff up as i go but this base is for two big portions:
fry 1/2 onion & 2 cloves garlic in oil, add tsp each of ground corriander, tumeric & cumin.
add half-boiled pasta and just cover with equal amounts of milk and water. add grilled diced peppers/corgettes and simmer for 10 mins.
add peas/asparagus/spinach, tinned salmon(or cooked chicken) more spices to taste and a tblsp of flour to thicken and simmer for uncovered for 10-15 mins to thicken.
rice and beans with coconut milk to make it saucy?
or risotto? i find it perfectly creamy without wine or cheese and thus very cheapLiving cheap in central London :rotfl:0
