Freezing Question

Apologies if this has been posted before, I've had a quick look but not sure:
I have got some courgettes and peppers that I'm not going to get time to eat before I go away for a few days.
Can they be sliced and frozen? or will I have to make them into into a dish of some sorts and freeze them that way?

I've made and frozen things with courgettes before and to be honest they haven't been very successful. The courgettes have been very mushy when defrosted and reheated, and the flavour was quite bland. Not sure if they would be better frozen raw or blanched though. I presume peppers can be frozen as you sometimes get them on frozen pizza. Otherwise you could roast them and store them in some flavoured oil. I'm sure they would keep for a few days in a sealed jar like this0

With an onion and tomatoes you could make ratatouille (have i spelt that right) i freeze that and it tastes fab.0

How about putting them in a jar and cover with oil? Not sure how long it would last tho'0

Courgettes
chop into 1" slices, blanch 3 mins, freeze on trays or in layers between parchment or foil. this can be poured into large bag after frozen.
Peppers
whole or sliced, blanch for 2 mins, freeze in bags.

Many thanks for the replies, I hadn't thought about putting the peppers in oil. I have some chilli oil which could be interesting to try it with
I've never made Ratatouille (sp?) will give it a shot and then blanch and freeze the rest.
I've never grown courgettes before - boy do they produce once they get going! :j

Peppers will freeze just fine, but will keep longer if blanched first.
Courgettes will go a bit watery when defrosted, they are better frozen as part of ratatouille, as aimeelister says.0
