leftover breadcrumb question

I am now addicted to saving leftover breadcrumbs after reading it on the forum, question is, could I make a sort of pudding with it by mixing egg and sugar and baking it? Could be like a bread pud, maybe add dried fruit. I thought I'd ask as I have used all the leftover breadcrumbs and need to start saving more to try it!

I freeze all my bread for the week and defrost as needed (sometimes a slice or 2 at a time) Can I re freeze it? I don't normally do this as food hygiene dictates not to...

    I haven't tried pudding, but have used crumbs mixed with various things as a savoury topping eg I turned left-over chicken into chicken casserole, topped with crumbs/sage/mustard. Using just mustard (and a smidge of butter) it works well on top of beef in beer casserole.The underside soaks up some of the juice, and the top goes crunchy (needs 20/30 mins).

    I've also added grated cheese, on top of a tuna bake made with tomatoes and a few olives.

    Some months ago I made lots of sandwiches with cut-off crusts, which I froze. I did eventually throw some out, as even I could see that I was heading down the mad person route, with no room for anything else in the freezer!

    I'd say that your suggestion would turn out not unlike scrambled egg in flavour. However, if you have any vanilla pods (or essence, failing that) it would probably give it a better dessert flavour.
    As nothing was wasted during the war, stale breadcrumbs featured in many recipes. A quick search on the web produced these recipies which you might find useful (not to mention delicious).

    I do this all the time, been doing it for years, no-one's died yet.

    Here's a good recipe adapted from a wartime recipe

    Duke Pudding

    Soak 2 cups of breadcrumbs in water, squeeze out and beat the lumps out with a fork.

    Add 2 tbsp of melted butter, 2 tbsp sugar, 3 tbsp of any dried fruit and a grated carrot.
    Add a tsp of mixed spice.

    Stir 1 tsp of bicarb into a little milk and mix with other ingredients.

    Spread out on a greased pie plate or shallow dish. Sprinkle with a little sugar and bake at 180c for 30 mins

    I'll carry on refreezing then if everyone is still alive !
