Mortgage Criteria - 2 questions about a future pay rise and wife's ad-hoc income

I will receive a pay rise in August. Can anyone give me any advice as to when lenders will take a serious look at my new income and give me an AIP taking it into account?

Secondly my wife works as a sessional interpreter and as a class room assistant through an agency. I realise that we can't use her income as part of the income multiples for the mortgage but will they take her income into account for things like household expenses? I ask this because when I've been used bank's on-line quick quotes I've noticed that some banks change the amount they lend depending on how many people live in the house and although we can't use her income towards the income multiples she does earn money and contributes towards house costs.
