You could try this recipe from Delia Smith:

    http://www.deliaonline.com/recipes/fried-halloumi-cheese-with-lime-and-caper-vinaigrette,1315,RC.html

I haven't cooked it myself but it looked yummy on one of her TV shows.

I had halloumi a couple of days ago as a kebab - cut it into cubes and thread onto skewers with chunks of pepper, onion, mushroom, cherry tomatoes etc. We cooked them in the George Formby grill, but I reckon they'd be lovely on the barbecue.

Kebabs (bbq or grilled) are the best thing for halloumi - chilli is good for the marinade. If you have time marinade everything overnight - cheese, red onions, peppers, mushrooms, garlic, salt, pepper, chilli pepper, chilli powder, virgin olive oil, balsamic vinegar, lemon.

Also it's nice in a ciabatta with beetroot and salad + dressing.

My favourite haloumi cheese recipe is to use it to stuff peppers then grill or bbq the whole thing - I use the long green peppers you can buy in Turkish/Indian greengrocers, they aren't as sweet as the big peppers but not as hot as chilli pepper, plus they are really cheap! Just slice the pepper down the side, take out the seeds, stuff with haloumi slices, drizzle with a little oil, grill until starting to char and haloumi is melting. It's really tasty and really easy and a nice alternative for vegetarians at a bbq.

I would agree that the best thing for haloumi is to grill or bbq it, otherwise it can be a bit squeaky!

i either do kebabs on bbq with cherry toms, peppers, halloumi, courgette

or fry it in its own juice in a pan until it browns and put in pittas with salad and onion and serve with chips!! mmmmm

i love halloumi and always keep some stashed in my freezer!

it is best to cook in quite thick slices. it is very filling too. YUM YUM!

  • Fry,after marinading in a bag with garlic, onions, chilli, thyme , oregano, basil, peppers and lemon juice, whatever you've got hanging about your cupboard really. empty into frying pan GENTLY fry. The marinade turns into a gooey tasty sauce and the cheese sucks up the flavuor- serve with rice/pasta/potatoes.Iis well tasty, honest.

Thank you all, couldn't wait till tomorrow night so did it tonight - panfried in sunflower oil (didn't realise I could cook it in it's own juices) served on a bed of baby salad leaves, tomatoes and chopped peppers with balsamic vinegar. Potatoe wedges and a crusty bread roll!

I was stuffed after it! OH asked when the main meal would be ready lol
