What to do with Mint marinade??

I am having a 'meat free' month and have lots of packets of the AP food mint marinade.
Does anyone know what I can make using the marinade without using meat ???.
I really have no idea but am sure someone on here will know what to do with it ;)
Oh for some lamb to go with it, worse still I have a leg of lamb in freezer ............. arhhhhhhhhhhhhh

    sorry clutching at straws a bit i think. why not wait till you are having meat and enjoy it with a nice bit of lamb.

    Because I have sooooooooooo much of it, well about 12 packets ( I was thinking of lamb at the time :()

    If you can get some halloumi cheese then it would probably be good on halloumi and veg kebabs - halloumi has mint in it anyway, I think, so I imagine the flavour would work. I would add that halloumi kebabs are even nicer cooked on the BBQ, but that's probably a bit over-hopeful at this time of year! :)

    Use it to make a salad dressing? I accidentally put mint sauce on my salad once and it was gorgeous!
  • Could you mix it into muffin mix to get chocomint muffins?
    A kind word lasts a minute, a skelped erse is sair for a day.

    If it is in packets and near the use-by date, then why not freeze it until you are going to have some lamb?
    Mix it in with couscous for a salad type meal (add veggies of your choice.)

    do a swap with friends for a packet of something more useful?

    Perhaps mix it with some chopped fresh tomatoes, red peppers and red onion to make a minty salsa.

    Or mix with some chunky vegetables and roast in the oven?
