Hi
I bought a rumptoft thingy in the car boot sale this morning ( I actually said to the lady as i was handing over my quid, I know I am never going to use this...).
So now I have a determination to use it but I am wondering, does it need to be rum or would Amaretto be strong enough to preserve the fruit ?
Any advice gratefully received.

I've not made it before, but there are several versions. There's a French version called confiture de vieux garcon (old gentleman's jam) and a Kentish one called Hodgkin which uses brandy. I think any spirit will work, according to my book - Kettle Broth to Gooseberry Fool by Jenny Baker you can use vodka and white rum as well as brandy so I don't see why you can't use amaretto. HTH:)0
