why do my yorkshires stick?

help please! why do my yorkshire puddings stick in the pan? i have a non stick yorkshire pudding individual tins, but even though i melt dripping in there first and then add the mixture, it sticks and i end up with a mess!
Any tips would be welcomed.

    Do you let it get sizzling hot before you put the mixture in ?, the oil needs to be boiling in the bottom of the tin before adding the mixture.

  • Have you got the oven hot enough, AND the pan/dripping hot enough? the dripping needs to be as close to smoking point as possible and you need to keep the oven really hot too.

    I use cake release available from lakeland, just brush a bit in all the "cups" of the tin, pour the batter into the cold pan and bung it in the HOT oven. My way of thinking was if it's good enough for aunt Bessie, it's good enough for me!

    I had this problem and my OH's grandma tells me it's because I washed the tins after I'd used them :confused:

    She game me one of her tins and told me to just wipe it out with kitchen roll after using them.

    To be fair the puds in her tin didn't stick but it just feels weird not to wash them up!

    I bought all sorts of tins because my Yorkshire Puddings stuck - even the expensive tins. I then bought the flexible silicone tins (they're about £10 from Tesco or Lakeland) and they're wonderful! Nothing sticks! You only need a tiny amount of fat in them.

  • What yorkshire pudding batter recipe are you using? I find that if you use 100g flour, 2 eggs, 200ml milk and a tsp of oil then the batter doesn't stick as long as you have the fat in the tins really hot. But if I only use one egg it sometimes sticks - something to do with the fat in the eggs.....

    definately best not to wash up the tins after use, and make sure oil is realy HOT!

    Muffin tins - bah! Mine have never seen muffins, make cracking yorkshires though

    I agree with your OH's grandma, it was actually my dad that gave me this tip, he caught me washing mine one day after hed been for sunday dinner and told me that was why they had stuck :rotfl: it was my dad that taught me how to make yorkies too, he loves his sunday dinners.

    Thanks to everyone who replied. I have cracked the problem and it was that the pans were not hot enough. So I did as advised and VOILA!! success.

    My wife uses my late mum's tins - they're actually old Fray Bentos pie tins
    They haven't been washed in at least 20 years

    & the puds never stick
