Leftover Veggie Roast

Hi, As above really. I'm a fairly new veggie. Had the Linda McC roast for dinner yesterday and as I'm the only veg I have 3/4 of it left over. Any ideas please for what I can make? I thought of Veggie stovies, but not very inspired! It was really nice & can't stand to waste it. (thanks).

    We just eat it cold with salad but you could put half in a baking dish, cover with a layer of tomato sauce, a layer of grated cheese and then the rest of the roast, cover with foil and bake for a while.

    Hi There

    Could you break up the roast and make rissoles, or use it as a meat substitute to make a pasta sauce. Not familiar with the brand but if its a nut roast type thing or a quorn type thing, then chopping it up would mean you can use it as us meat eaters would.

    I had a Quorn veggie roast for dinner today. I live with my daughter (who is actually the vegetarian), but it is still too much for the two of us. I always make extra of the whole meal and then freeze a couple of potions of the full meal. It is really handy if I have had an exhausting day at work.

    Freezing is what I was going to suggest :) Would you use chunks of it in a spanish style omelette?

    could you use the veg and potatoes to make bubble and squeak and then perhaps it.
    if not again with salad/omlette or sliced perhaps in sandwiches toasted perhaps.
    if not again with some sort of pasta or rice dish or on the side with a jacket potatoe, or meddeteranian roast style veg or perhaps some sort of veg stew/casserole with the quorn on the side.
