    Hi Rikki,

    If you are planning to serve the pepper sauce with meat, cook the meat in a pan so that the remaining juices can be the base for the sauce. Once cooked, put the meat aside to rest.

    Pour in some white wine (or brandy if you have some) to deglaze the pan.

    Add garlic, mixed herbs and black pepper ( I like lots).

    Add half a stock cube, made up in a litte water.

    Let the sauce simmer until it begins to reduce, if necessary add some cornflour in a little cold water to thicken it. Use a whisk to avoid any lumps.

    Stir in some double cream (optional, but it makes the sauce richer).

    Finally add any juices from the resting meat and a knob of butter to make the sauce really glossy.

    Reading back, this sounds really complicated, but it isn't and only takes 5-10 minutes at the very most.

    Now I'm between a rock and a hard place.

    My Remy Martin or open a Bottle of Wine, which of course I'm just going to have drink.:confused:

    I really enjoyed that. I'd like to make it a little sweeter as I didn't have any cream left. I'd used it in the chocolate cake icing.

    I use to make one that used white wine, garlic and worcestershire sauce. Its quite tangy.

    hi,

    i used to work in an hotel and all we did was put some gravy granules in a jug add loads of freshly ground black pepper and make up with boiling water make it thicker than usual then add some cream until you get the thickness you want. if you've got any meat juices add those.

    My Husband recently made himself some pepppercorn sauce. He said it was Ok whilst he was eating it but about four hours later he suddenly turned to me and said "I forgot to put the peppercorns in" Gave me a good giggle.
