Hi folks
Black-Saturn suggested on another thread that I post my shopping list and menu plan. I'm not quite that brave yet but I thought others might like this recipe I make fairly often for two adults and three teenagers (2 are boys).
RANCHERO PIE
2lbs minced pork
1 tin of beans
1 tin of chilli beans (OR 2 tins regular beans and 2t chilli powder)
salt and pepper
dash hot pepper sauce to taste
about 2lbs potatoes
200g cheese, grated
(sorry the quantities are a bit haphazard - I just do it by instinct)
Brown off the pork in a big pan pouring off any excess fat. Add the tins of beans and chilli powder if necessary, seasoning and hot pepper sauce. Simmer for 10 minutes. Meanwhile peel the spuds and chop them small. Boil and mash. Add the grated cheese to the potato. Pour the pork mixture into a large ovenproof dish and top with the cheesy mash. Bake until the top is browned (at about 200 degrees electric). You can just add a bit of crusty bread or some veg on the side if you like.
I bought my pork for £2.98, the spuds were reduced at Somerfield - big bag of baking potatoes for 49p, beans were 25p, chilli beans were 49p. I guess the cheese was about 40p worth. I already had the pepper sauce. So that's a total of £4.60 for the meal. I'm well aware that I could buy cheaper minced pork but I've got a thing about Value meat and just don't buy it. Also if your children are less piggish than mine you could get away with 1lb mince.
I hope someone tries it and if it's been posted before - my apologies. I should add that previous to MSE we thought nothing of spending £30 on takeout pizza for our dinner so this is a big improvement for me.
