I tried to make some of these for my mum and MIL for Mother's Day, some 5,768 egg whites later I reluctantly admitted defeat :~(
I am now determined to master them (so pretty!) and am gonna have another bash this weekend. One tip I've seen in various places is to "age" the egg whites, so basically you seperate the eggs and then leave the whites in a container for 48 hours before making the macarons. This is well worth a look too, although you might put on a couple pounds just browsing!
Can I ask what went wrong with yours? I tried really hard not to overmix but every time I put the mixture into the piping bag it was just streaming straight out again...
I too would appreciate tips fom any seasoned macaron makers!!0 -
Someone on the Delicious website said that their recipe was rubbish and gave a link (I didn't make a note of it and am going to have to go hunting again) to a french site where there's a video. It does look a bit of a faff, but the video is very clear - they heat the egg white and you must let them sit for a bit to get crusty before you cook them. I'm tempted to try.....0

Aha, found it. It's in french but the video is quite clear, she only does one eggwhite at a time because she says it's hard to pipe if you double the quantity - it does look a faff, but they do look gorgeous :j
