    Weight is a better guide.I weigh each egg and write the weight on the egg with a marker pen,as the weight can vary quite a lot in a box.Even if eggs are marked medium/large each egg will probably be off a slightly different weight.So you could easily have two medium eggs from the same box,with one weighing 53g and the other 62g.Quite a difference but they're still classed as medium.

    Yesterday I bought some large eggs when I meant to buy medium.I need two medium for a cake recipe so I'll use the eggs weighing 62 and 64g-the smallest in the box.

    I just use however many eggs it says, regardless of size. Can't say I've had any disasters yet/

    Ditto this, have never specifically bought large eggs and always just use the amount of eggs regardless of size.

    We can say medium = 58, large = 68, and based on that, six large = 7.03 medium.

    But the OP's approximations are not bad really, if you were going to use medium, then five smaller medium eggs for 4 large ones would make sense.

    There is a site called egginfo.co.uk which gives weight approximations for the 'new' sizes (small, medium, large, ex.large) and also 'old' sizes (0-7). This is what they suggest:

    Very Large (size 0-1) = 73g +over

    Large (sizes 1-3) = 63 - 73g

    Medium (sizes 3-5) = 53 - 63g

    Small (sizes 5-7) = 53g + under

    Just adds a little more information for those using recipes with the old numbered sizes (my Bero recipe book is full of them - '1 egg - size 3')
  • I was a little horrified when I read some of you mark your eggs with marker pens! :eek:

    Egg shells are porous, marker pens are toxic!

    Use an edible pen instead, they contain food colouring and are for drawing details on sugar characters and cake coverings, they cost a couple of quid and are much safer than potentially poisoning someone!

    Please help me not ruin my gin & tonic cup cakes - the recipe says 2 large eggs but I only have medium.......how many shall I use?

  • I've never found a "real" difference between large/medium eggs so I just use the same amount. Never ever had any problems. HTH :)
