Hi all.
A friend just pointed out that there is a whole load of horseradish growing in the field behind my house, and I was wondering if anyone had any ideas of what I could use it for (aside from accompanying beef in a sandwich!). Thanks a lot!

There was a thread about this on another forum I'm on so can't take credit for any of the suggestions! Here they are:
Mix it with seasoned breadcrumbs and egg white and use it for coating chicken or fish
Mix it with a little mayo and put it on red meat
Put it in salmon fishcakes
Mix with ketchup and eat with prawns
Put in apple sauce, guacamole, and waldorf salad
Put in mashed potato
Add to devilled eggs
Hope they give you some ideas!0 -
Cheese and horseradish sarnies are nice to take to work.If you lend someone a tenner and never see them again, it was probably worth it.0

Which bits of the horseradish do you use? Do you use it raw? There's tons of it by our allotment so I'd like to know what to do with it.The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.0

The roots are what you use. Wash them then peel them. The peeled root is usually used grated. Make sure you wear gloves - raw horseradish root can be a serious skin irritant for some people.0 -

I often make beetroot and horseradish salsa. Take about four cooked and peeled beetroots and chop them into small dice. Finely chop a red onion (white will do if you prefer). Whizz them up with a blender. Add a little horseradish (either sauce or finely chopped/grated root) and blend again. Taste. Keep adding horseradish until it is piquant enough for your tastes.
Excellent with beef, venison etc. Also good as an accompaniment to salads, or just as a snack with vegetable crudites or breadsticks (homemade grissini are best).0 -

It also makes your eyes sting - worse than peeling onions
