I only work one day a week, so technically I understand I have 5.6 days a year holiday. Because I only work Saturdays I've never had a Bank Holiday off, so I understand (I think ) that my holiday should include bank holidays pro rata.

Sadly no (unless this is a contractual agreement at your firm).

If your contract says "X weeks holiday plus bank holidays" and the total for a full time person is more than 5.6 weeks then you have a case/

Otherwise the 5.6 weeks holiday is a statutory minimum and if you are part time you get 5.6 of YOUR weeks off. Working Mondays would be a smart move in this case!
