Using Roast Beef Leftovers

Morning Everyone
I have a huge joint of beef that I'm planning to cook for lunch today and am wondering what to do with the leftovers?
Mr LMLOD does not like cold beef sandwiches or cottage pie so those are out of the window, but other than that we're not too fussy!
Any ideas? I've seen the recipes for rubber chicken so hopefully there are plenty for rubber beef :rotfl:
