Morning folks
I need some ideas for lunch next Saturday as my mum, brother and SiL is coming to lunch. My weekly shop comes to £27 so I don't want to go over this budget too much. So that's 5 adults and 1 toddler and 1 baby I need to make lunch for. Any ideas?
I'm not concerned with biscuits or desserts for afters as I've got plenty of ideas from this board already - thank you!

If the weather's still warm, I'd go for a buffet or a barbeque. That way you can cater for all tastes and bulk it out with less expensive things like coleslaw, potato salad, pasta salad and garlic bread.
If the weather changes, a roast is hard to beat....it's simple and not as expensive as buying separate cuts of meat. Or what about a lasagne or pasta dish?

We had some friends round the other day and I was stuck...... I cooked some mince and added to the pan
Baked beans
tin of chop tomatoes (with or without garlic)
herbs and spices - what ever you have or prefer -
cooked veg(whatever you have fresh or frozen) then blend it down.. I do this as the kids dont like veg, this way they dont know as you cant taste them
anything else you may want to add.
cook slowly on a low heat, stir occ. Add gravey gran if you like, adds a bit of colour and thickens it up.
Foe the little ones I blend it down ... easier for them.
Also good for pack - up with pasta.
Hope that helps.. have a good time.0 -
Hiya,
I had people over last week for lunch, 4 adults and 11 kids!!!! I made a quiche the day before which I cut into slices and served cold on the day. I used all the odds and ends of veg with eggs and milk mixed and poured over the top. Grated a bit of cheese, sprinkle of herbs - lovely. Served with cold boiled new potatos, a big salad and hm bread rolls. I had a few sausage rolls on the side for kids and breadstix for picking at. Seemed to go down OK.WW Start Weight 18/04/12 = 19st 11lbsWeight today = 17st 6.5lbsLoss to date 32.5lbs!!!0 -
