Bruschetta help

Looking to make Bruschetta for a starter for 8. Does anyone have a nce recipe for this please? Know its tomatoes, onions etc but unsure of quantities and best way to cook.

    You don't cook. You smear the toasted bread with a clove of garlic then the chopped tomatoes with fresh basil and a drizzle of olive oil. If you want to get really fancy you could bung on some chopped anchovies, black olives or capers

  • To my knowledge the Italians use raw, chopped tomatoes and the Americans put bruschetta under the grill. You can do as you wish

    I work for a large chain of italian restaurants and all we put in our bruscetta is: chopped fresh tomatoes, chopped red onions, chopped basil, pepper, salt and olive oil. this mix is then put on top of toasted bread and you can have additionally speck ham on top or sliced mozarella - they dont measure anything but loads more tomatoes ( drained once chopped) than the other ingredients HTH

    Make sure you get some good tomatoes, this time of year it can be hard to get any with much flavour. Also store the tomatoes out of the fridge so the flavours develop.

    If you can't get any good tomatoes at the time then leave it until later in the season, bruschetta made with flavourless tomatoes is pointless.

    Fully agree with this. Delia's Roasted Tomato Salad is great for getting more oomph out of tomatoes and would be perfect for bruschetta
