Fruit Vinegar

Has anybody ever purchased or made their own? What was it like?
If you made your own, which method did you use?

  • I use this recipe for Raspberry vinegar it is the nicest I have done

    200g granulated sugar
    75ml water
    1 vanilla pod
    400g raspberries
    125ml white wine vinegar

    Make a vanilla syrup - put sugar, water and vanilla pod in a medium pan over a low heat, stir until the sugar is dissolved, then increase the heat and bring to the boil.simmer for 4 mins without stirring until thick and syrupy
    Put the syrup into a blender and process until the vanilla pod is finely chopped, then strain through a fine sieve then leave until cold.
    Put the fruit into the blender with 125 ml of the cold syrup and the vinegar and blend until smooth.
    (add a little more vinegar if it is too thick)
    Strain through a fine sieve into a sterilised bottle. seal and put in the fridge - it will keep for up to a month.

    You can use any fruit of choice - such as apples, mangoes, strawberries, cranberries, etc

    Butterflty Brian, thanks for the info. I've seen a more basic method; just vinegar and fruit (sometimes boiled),strained and left for 4 weeks I think. So without the added sugar, would it more taste mildly sweet like a neat herbal fruity tea beverage?

    Hi

    I make my raspberry vinaegar by just soaking the rasps in white wine or cider vinegar. I use it in salad dressings and it lasts ages.

    If you are making it as a cough remedy, then i suspect a lot of people would appreciate the sugar and vanilla.

    RAS - Thanks for the reply. I was thinking of more salad dressing than anything retaining the sweetness, so thought the boiling and vinegar properties may reduce this?
