Can i freeze potato salad?

I have a load of new potatos (came in the green box) and I dont want to waste them or make the usual mash out of them.
I was thinking of making a big batch of potato salad and freezing some. But would this work or would it go all odd when i defrost it!
When i make it i use a tub of soured cream and a tub of cream cheese with onion and chives with chopped spring onions and pepper.
If not has anyone got any suggestions on how to use up the potatos without wasting the "new"ness!

I've tried freezing potatoes (in curries) and they are horrible when defrosted

I'm pretty sure you can't do them in the potato salad, I wonder if blanching them like most other veggies, or even under cooking them, then freezing them (given that they seem to break down a certain amount in the freezer) would work. Perhaps worth an overnight experiment with a small quantity.
I do try to undercook them by putting them in last in stews I intend to freeze. Its just a bit difficult to say whether they taste radically worse for their freezing in that instance.
