Help............nedd quick n easy chicken recipe!

Options
Typical me, took some diced chicken out the freeser with intention of making a pie, but the weather has got sooooooo hot, nobody fances a pie!
Any ideas on what i can cok instead?
Not got anything adventurous in cupboard so please be gentle with me!

Have got lots of salad, potatoes, veggies.
Any suggestions?

Need to be able to cook quick as kids already hungry!!!!!!! :)

    Any rice? if so, do a savoruy rice thing......

    boil rice
    chopped onion, fried gently
    add rice, along with any veg (peas, sweetcorn, pepper, leek etc)
    add chicken

    You could make simple kebabs with chicken and onions cherry tomatoes and mushrooms brush with oil and few dried herbs and bung them under the grill. served with salad.

    The kids might find it fun if they made their own.
    If you've got plenty fruit they could make fruity kebabs for dessert.
  • Chicken kebabs:

    Marinade chicken in a little oil, juice and zest of a lemon, a clove of garlic crushed and some chopped rosemary (about a tablespoon)
    Halve an onion and then quarter this half and add to the marinade. Leave for 30 mins then thread alternate pieces of chicken and onion on the sticks (you could add some halved bayleaves too) Grill for 20 mins turning regularly.

    If you don't have kebab sticks', I suppose you could just grill as they are.
