I found this recipe and thought it looked quite good - except for the aubergine, could I replace this with courgette do you think ?

Recipe looks interesting, might give it a bash - and can see no reason why you couldn't substitute courgettes for the aubergine. I am thinking of substituting red kidney beans for the butter beans, as that's what I've got in the cupboard, and it looks like I have everything else - except the yeast flakes.0
