    Chicken en croute - chicken in pastry. No recipe needed - take a piece of chicken, wrap it in some pastry, bake in a hot oven. No cheese :D

    I often stuff the chicken breast with cranberry sauce / mushrooms / apricots / peppers / sundried tomatoes before wrapping in pastry and baking. I can't think of anything that I've tried that's not been nice so if you're just looking for something to liven up your chicken I'd say anything goes.
  • My mum always makes Chicken En Croute with stuffing, which to me is strange because whenever I look for chicken en croute through a search engine, the results usually come back with cheese... Anyway, just make up some stuffing (sage and onion is best) or buy ready made or packet mix and you're good to go! Hope this has helped you! With using stuffing aswell, you can have some sort of gravy with the dish :D

    I did some a couple of weeks ago with chicken and leek. OK, they looked more like pasties, but were very yummy!

    you could always substitute some tinned creamed mushrooms - it helps keep the chicken moist.
    and i love chicken and mushrooms.

    bit of a faff but stops the pastry going soggy,

    fry off some onions and mushrooms

    prefry the chicken (if in big breast portions), so it's cooked when the pastry is.

    lay the pastry down, put on a precooked pancake (rest of batch can be frozen for another time), put on some mushroom and onion, and chicken, seal and egg wash.

    bake off in oven

    I always make a mushroom stuffing, part cook the chicken and then put a blob of garlic and herb philly in too. Guess you could just leave the philly out but I think the mushrooms add moisture and stop the chicken drying out.
