Evening all,
I really want to make my own salad cream but can't seem to find a suitable recipe - they all seem really long winded.
Has anyone made their own salad cream and if so would you recommend it? If it was good I'd really appreciate the recipe.
I do seem to remember Gary Rhodes making his own salad cream on a TV show - but have googled and cannot find that recipe - only one that contains hard boiled eggs which seems a little odd.
Any help would be gratefully appreciated.

Actually, I have a feeling that salad cream does contain hard boiled egg yolks, as opposed to raw egg like mayonnaise. I've not made it myself, though. I'd be really interested to know if you find a good recipe.0

Thanks very much - so boiled egg yolks are the way to go. I assumed it was like mayo.

Thank you for the gastronomy domine link, Caterina. My DH is addicted to salad cream (I hate it too!), and as we cannot buy it in France I have also been trying to make my own. However the recipe I had (by Simon Hopkinson) specified 6 boiled egg yolks and 300 ml whipping cream, which is not good news as DH needs to shed some weight. I'm pleased to see that in the link you post we are down to 1 egg yolk only and a lot less cream.
My own solution to a lower-fat version has been to make up a batch of Weightwatchers vinaigrette from a French WW recipe book, then mix it with a little mayo to get the right consistency, and a pinch of sugar - salad cream is rather sweet tasting stuff.
That has also worked quite well!

This one might be worth trying - it's from the original Dairy book of home cooking
4 tbs each milk, vinegar and salad oil
1/2 level tsp icing or caster sugar
1/4 level tsp made mustard and salt
Beat milk, vinegar and oil together until smooth and well blended
Beat in sugar, mustard and salt
Add pepper to taste0 -
I am going to try and make one without cream as I do not eat dairy (ok with eggs though), wonder whether soya cream will work, or soya milk or yogurt to thin the dressing. Wil try and let you know results.Finally I'm an OAP and can travel free (in London at least!).0
