Self-employed question

I owe 97K on a flat I purchased at 140K four years ago, I guess it could be worth anything from 125K to pruchase price (Zoopla claims it's up a bit, but I don't believe it). I am on a three-year fix with Halifax that comes to an end in November, reverting to their SVR.

I've been living abroad for two and a half years, but will move back to the UK in May. I will continue working for the company I currently work for (a big Middle Eastern media company) although I will work from home (in said flat) due to a change of role. I thought I was simply going to have a change of job description, but it turns out according to the paperwork I will technically leave their employment and be working as a freelancer making me self-employed.

I will earn, on current exchange rates benefitting from the weak pound against the US dollar, around 51K a year. I will have whatever contract I sign (although presumably only for 12 months or so) and no backdated accounts. Can anyone advise gow will this affect my remortgage options? I want to have overpayment/offset options as I will earn double what I was on when I took out the mortgage, have a lodger and have spare cash to pump in but am concerned that as someone self-employed with no backdated accounts I'll have few options.
