hello lovely ladies and gents!
im just curious if you are able to make soup out of ham shank?
you may have read a previous post about my chicken soup going horribly wrong! opps! imglad to say the second batch turned out lovely. i am now keen to make more but don't want to get board of chicken. im not a great veggie eater so would liek ot make 'meat soups' only i doubt you can really make it from pork or beef as no bones to boil?
so then i though about ham shank, would this work

ham shank makes excellent soup
just add you usual veggies & any pulses etc you like
I usually put in onion and/or leek, carrots, turnip/swede, barley & red lentils as a basis & sometimes add butter beans, & right at the end of the cooking shredded savoy cabbage leaves for a bit of colour & texture (I keep the coarse outer leaves when I'm making cabbage with a meal, shred & freeze them ready for soup)
I'm sure there'll be loads of other people along with their own favourite recipes for you to choose from

Ham shank (or ham hock) makes a fabulous lentil or pea soup. This thread has lots of ideas and recipes that should help:

To make lentil soup I simmer the shank until the meat is cooked. Remove the shank, and remove and save the meat. Heat a little oil and butter in a pan. Add a clove of garlic, an onion, chopped carrots, a potato and allow them to sweat (sit covered over a low heat) for about 20 minutes Add red lentils, black pepper and the stock from the shank. Leave to simmer until the lentils and vegetables are cooked.
Serve as it is and add any chopped up bits of left over gammon or if you prefer a smoother soup blend it with a stick blender before adding the gammon.
I'll add your thread to the one above later to keep the suggestions together.

You certainly can - ham stock makes a really nice lentil soup, in particular. The only thing you need to watch out for is that it can be a bit salty (as the ham has a lot of salt in it), but the two lots I've tried have been fine, they just didn't need salt adding to the finished soup.

I have done this once off the bone. I put the joint in cold water and some lentils. Then simmered for a few hours until cooked. Then i added the carrots leeks and potatoes and parsnips. Eventually the ham fell off the bone
Hocks and shanks are similar cuts as I understand - and i looked out a thread on ham hocks as there are various recipes in there you can read.
Ham hocks - bargain food
I think this would be the best thread to add yours to once you get a few more answers (but I am thinking!)

do you think it would taste ok on its own, with some mushrooms and perhaps potatoes, as i said i dont really like veg so much0

Probably be ok with mushrooms and potatoes, especially as the potatoes would soak up some of the saltiness, but a good ham and pea soup is hard to beat! Whatever you make, add sauteed onions, as they will add some healthy veg without affecting the flavour at all.Trust me - I'm NOT a doctor!0

Rib of beef makes a wonderful stock :T We don't have it often, but it makes a fabulous base for a French onion soup

Mmm am ashamed to say I have never had french onion soup so have to try that now!
Would it be fair to say you can make stock from any joint/meat bone? I've never asked, and rarely buy big joints of meat.... I feel silly asking but I genuinely don't know!:o:AA little nonsense now and then is relished by the wisest men :cool:
