Nut Brittle

Hiya, I tried to make nut brittle this afternoon and it has not set.
Any idea's why?

I boiled 1 cup of sugar and 1 cup of water in a pan and alowed it to boil for a wile and then poured it into a baking tray and added peanuts.

I have now put the tray in the fridge as the mixture is now cold, it is not looking hopeful:(. Julie

    You have to boil the sugar solution it till it reaches the correct temperature for your purpose and to check this, you need a cooking thermometer. Usually these thermometers are marked "Soft crack" and "hard crack" and other such entertaining names. (I have a very easily amused mind.) Did you use a thermometer?

    We used to make it by slowly melting some sugar in a frying pan, then throwing in some nuts...

    Ive made it before without a thermometer, I add the nuts while still in the pan and wait for the mixture to reduce and get sticky beforehand. I got the recipe from the BBC website.
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

    You can check if it has reached 'hard crack' without a thermometer. Put a saucer or small plate in the freezer for a few minutes while your sugar mixture is boiling. Take it out when it is pretty cold, and put a drop of the sugary stuff on it. If it goes hard, then it will set, but if it stays gooey it needs more boiling. You can do the same thing with some ice water, just drop a little of your syrup into a small amount of water with ice cubes, and it should set quite hard in a few seconds.

    I use the plate trick every time I make tablet :D although I dont put it in the freezer first just use a cold plate and put a drop of the sugar mix onto it.......
