Can you substitute wholemeal flour for white flour? If so is it self raising or just plain flour you use? I know the old hands at this will have the answers to this newbie cook! Also, I thought you had to knead bread to help it to rise, yet it says in the recipe you don't need to knead. I'd be interested if anyone has baked bread this way. Thanks.
I make this recipe regularly and no, you don't need to knead ! It is, however a very dense loaf and doesn't rise much. I love it, really wheaty wholesome flavour.
I wouldn't substitute white flour for this loaf, instead make this one http://www.deliaonline.com/recipes/plain-and-simple-white-bread,1350,RC.html which I also make (usually substituting 1/3 flour for wholemeal). This is an excellent everyday loaf. I triple the ingredients and make it a couple of times a week.I reduce the salt btw.
