Meal ideas

Hi

Its the week before pay week and am tryin to use up what we have in but i just cant think of any meal ideas.

Can anyone think of any recipies to use up

2 large red peppers
3 onions
half a sweede
half a celeraic
celery
garlic
1 chilli
1 tomato
loads potatos

only meat i have is a couple of portions of mince, 2 bags of quorn, 2 chicken thighs and 2 pork chops

then the usual store cupbord stuff its only to feed 2 of us

    the peppers and onions i would stir fry, add some curry spices or mix of black pepper, cayenne and ginger (for bbq taste), and serve either on jacket potatoes, or use the soft flour tortilla recipe on front page of feb grocery challenge if you have some flour in. Also you could stir fry some chicken in with it too..

    and cottage pie, with minced beef, onion and swede with some mash on top.
    nov grocery challenge, £.227.69/300, 9/25 nsd: , 7 Cmo, 10 egm.
    Me, 10 yo dd, and the dog. all food and drinks, in and out, plus household shopping.
  • You could make a cottage pie with the mince. For the topping you could have mashed potato and swede.

    If you have any chinese spices you could make chinese chicken thighs and stir fried veg.

    A stew with the pork and some of the other veggies.

    Finally at the end of the week, chuck everything you have left into a pan of boiling water and make it into a soup.

    How about chilli con carne, chicken casserole, and roast pork chops! All quite straight forward and you could bulk out the chilli with some rice. Then rice, pasta or potatoes with the chicken, and roast potatoes, yorkshire or suet pudding, and home made stuffing with the chops! You could also make some soup as well for another meal!
    Mmmmm....making me hungry!:)

    I was going to suggest a stir fry or chilli con carne.

    Mashed potato is a good alternative to rice or pasta, obviously depending on what sauce you are having but I think it is great with any tomato based sauce

    Grill the chops and serve them with a root veg bake......

    Thinly slice the potatoes and celeriac, layer in an oven dish (add some butter between layers if you like), add some stock and maybe top with cheese and bake in the oven (quite slowly so it cooks through before the top burns!).

    I'm with lisa26 on the veg bake - I'd add the swede too, and scatter finely sliced onion between the layers - but I'd gently simmer the veg in stock/water before baking - when half cooked or thereabouts drain, keeping liquid and put in oven dish. I reduce the liquid until syrupy, add a bit of milk or cream if I have it, mix with the syrupy stock and pour over the layers (just enough for moistness) I find this cooks much more quickly in the oven saving electricity.
