    Yes, put it briefly on cv and form not in covering letter - sometimes the covering letter won't be looked at, just the 'formal' part.

    It's worth referencing because carers have a wide and varied skill set which employers can find useful. They are organised, good with people, tolerant, hard working, compassionate, tend to be patient and able to multitask and think on their feet. she should make sure that she can make reference to the skills and abilities she developd and used during this time if they are relevant to the job she is applying for. the covering letter would be the place for that, with just a short mention in her employment time line on her cv.
