Yep, the smoked paprika I have is a brand called La Chinata and it has the "Delia Cheat" label on it. It's fantastic! Anyone who actually buys salsa rather than making it is missing out. It's so easy to make a child could do it and only takes five minutes or so0

ooh I ADORE fajitas. I marinate my chicken strips in lime juice, lime zest, brown sugar, cinammon, chilli powder, cumin, coriander, salt and pepper. Garlic, and onions are sweated off first, then chuck in the chicken and the juices, then finally the bell peppers.
The sugar/lime juice makes the chicken both caramelised, and tasty as! So SO So moreish!
I use a similar base when making enchiladas, but add a tin of chopped tomatoes, and a carton of sour cream/creme fraiche to the mix.
And one of my all time favourite comfort foods is my mexican lasagne.
Make a chilli mince, and instead of using lasagne sheets, use flour tortillas to layer up the lasagne. The white sauce is made using mexican cheese (tescos is best imo) and then top with crushed up tortilla chips and a scattering of mexican cheese!
