I have coscos, brown rice, white rice, tins of tomatoes, half a kilo of mushrooms, bacon bits, eggs, cauliflower, broccoli, cherry tomatoes, kidney beans, tuna, one red pepper, one green pepper, and cheddar cheese. Any suggestions would be very welcome.

i would make stuffed peppers and serve with brown rice.
Part cook cous cous, lightly fry mushrooms bacon bits, kidney beans,chopped broccoli and cauliflower. mix in half a tin of tomatoes and stuff the peppers. cook in oven for 45 mins. With rest of tomatoes heat in saucepan with a bit of oil, and garlic and herbs and spoon this onto the top of the peppers during cooking. For last ten minutes put the cheese on the top. Serve on bed of brown rice. Make an italian started with tuna and cherry tomoates some olive oil and garlic, Serve on some toasted ciabatta or mix in chick peas if you have any.
Make a batter with the eggs and some flour and milk and have pancakes for dessert.

I make something similar to cauliflour cheese but use both broccoli and cauliflour and hard boiled eggs sliced in half.
You could make a lovely omelette with mushrooms and bacon bits.
Scrambled egg with bacon bits and myshrooms on toast.

mushrooms will go ofd quickest so I'd go for a mushie risotto; red pepper souffle next day (roast peppers, skin and ouree before mixing with the eggs) , and plan a cheesey brocolli and cauliflower bake for the day after.Debt free 4th April 2007.

I'd make a gorgeous tuna salad with the tuna, 1 0f the peppers, cherry toms, mushrooms. to start.For main I'd make a spicy sauce of tinned toms, kidney beans, bacon bits, a pepper, some mushrooms, served on cous cous with cheese grated on top and steamed brocolli/cauliflour on the side, and for pudding I'd do rice pudding with the whie rice and eggs. yum yum !! Mmm, all sound lovely - just to add my two-pennorth, if you make the cauli/broccoli cheese, add in a few crispy bacon bits before baking - it adds a delicious saltiness to it and makes it more of a 'main' meal IMO.

I just wanted to say thank you so much for your ideas everyone. It is amazing what you all came up with, with those few ingredients. I made the Italian salad with tuna and chickpeas, tomatoes garlic and it went down a treat. Will do mushroom risotto today and stuffed peppers tomorrow. If the cauliflower and broccoli hold out I'll do the bake with the bacon for lunch or another dinner. Thanks again the ideas were much appreciated.Penny xxx
